Description
Care & Seasoning

Before your first use

  • Every piece ships pre-seasoned with vegetable oil, but a quick re-season before first use builds an even stronger, more durable surface
  • Rinse with warm water only — no soap needed on the very first wash
  • Dry completely, then rub a thin, even layer of cooking oil over the entire surface
  • Heat on low-medium flame for 5 minutes, let cool, and it's ready to cook

After every use

  • Clean with warm water and a soft brush or sponge — avoid soap and steel wool, which strip the seasoning
  • Dry immediately and thoroughly on low heat to prevent rust — cast iron should never air-dry
  • Apply a light coat of oil while the pan is still slightly warm, then wipe off any excess

Building seasoning over time

  • Seasoning strengthens with regular use — the more you cook, the more naturally non-stick it becomes
  • If food starts sticking or the surface looks dull or patchy, simply repeat the seasoning steps above
  • A little rust on the surface is normal and easily fixed — scrub gently, dry fully, and re-season; it doesn't mean the pan is damaged

Good to know

  • Avoid cooking highly acidic foods (like tomato-heavy curries) for extended periods until seasoning is well-built up
  • Store in a dry place; a thin film of oil before storing prevents moisture buildup

Two pans in one — brilliant concept, even better execution

I was hesitant about the reversible concept — seemed like a gimmick. It is absolutely not. The flat side makes perfect dosas and rotis. Flip it over and the ridged side grills paneer, vegetables, and sandwiches beautifully. Both sides work excellently. I've removed a dedicated grill pan AND a tawa from my kitchen to make space for this one piece. Less clutter, more versatility. Genuinely one of the best kitchen purchases I've made.

The grill marks on my paneer are restaurant perfect

I've been trying to get proper grill marks on paneer at home for years. Nothing worked — thin pans, non-stick pans, even a contact grill. The ridged cast iron side of this griddle, preheated on medium-high for 4-5 minutes, produces deep, clean, beautiful grill marks on paneer tikka. The cast iron gets hot enough to sear and char without the paneer sticking. My paneer tikka now looks exactly like restaurant presentation. Incredible result.

Excellent product overall — cleaning the ridged side took adjustment

I want to be upfront: this reversible griddle is excellent and both sides cook superbly. My reason for four rather than five stars is entirely about the ridged side cleaning, which took me longer than expected to master. The first two weeks, food residue in the grooves between the ridges was tricky to remove and I was worried about rusting if I left moisture in those grooves. After experimenting, I found the solution: while the griddle is still warm (not hot), use a stiff-bristle brush with warm water and work along the grooves. Dry on low flame for 3-4 minutes to make sure all moisture is gone, then oil. Once I figured this out, cleaning became routine and quick. I wish the included care instructions had addressed the ridged side specifically, as it does require slightly different technique than the flat side. On cooking performance — genuinely five star on both sides. The grilled paneer, vegetables, and dosas are all excellent. I subtract one star purely for the cleaning learning curve of the ridged grooves, which I think could be better communicated. Would absolutely recommend to anyone, with the advice to be patient with the ridged side cleaning in the first few weeks.

Used the flat side for dosas every morning — perfect crisp

My mornings start with dosas and the flat side of this griddle is simply excellent for it. The 30cm surface is big enough for a full-size crispy dosa. Heat distributes perfectly across the entire surface — no hot spots, no uneven browning. My dosas come out uniformly golden and crispy from edge to centre. After about three weeks of daily use, the surface has built up a beautiful seasoning layer and the dosas practically slide off on their own.

30cm is the perfect size — fits the large burner exactly

The 30cm diameter is exactly right for a standard Indian gas stove large burner. The griddle sits centered over the flame and heats evenly across the full surface. Not too small that dosas touch the edges, not so large it hangs off the burner. The size feels like it was designed specifically for Indian kitchen stoves. Both the flat side and ridged side benefit from this perfect sizing. A well-thought-out dimension choice.

Replaced my non-stick tawa and my contact grill with this one

I had a dedicated non-stick tawa for rotis and a separate electric contact grill for sandwiches. Both took up space, both had limited lifespans, and the grill pan's non-stick was already showing wear. I replaced both with this reversible griddle. The flat side outperforms my old tawa. The ridged side outperforms my old contact grill. One pan, two surfaces, better results, less storage space. An obvious winner in every way.

Grilled vegetables have never tasted this good at home

I love grilled vegetables but never got good results at home — steamed in a pan, soggy in a microwave. The ridged side of this griddle changes that completely. Courgette, capsicum, mushrooms, broccoli — all get proper high-heat grill treatment with beautiful char marks. The vegetables taste like they came off a restaurant grill. The even heat means every vegetable piece gets the same treatment. A complete revelation for anyone who loves grilled vegetables.

Chicken tikka on the ridged side — spectacular results

Making chicken tikka at home always disappointed me — baked in the oven doesn't get the char, cooked in a pan doesn't develop the crust. The ridged grill side of this griddle, properly preheated, gave my chicken tikka the char and crust it needed. The ridges keep the chicken lifted slightly off the surface so excess marinade drips away and the meat gets direct high heat contact. The result was genuinely the best chicken tikka I've made at home. A game changer.

The dual handles make flipping the griddle completely safe

My first concern with a reversible griddle was: how do you flip something this heavy safely? The dual cast iron loop handles answer that question perfectly. They give you a secure, balanced grip on both sides. Even when the griddle is hot, I can use thick oven mitts on both handles and flip it safely with full control. The handles are part of the casting — no rivets, no screws — so there's no risk of them ever loosening. Excellent engineering for a product that requires this kind of handling.

Works on induction — perfectly flat, no wobble

I was specifically looking for a reversible griddle that would work on induction and most options either wobble or don't heat evenly. This one sits perfectly flat on my induction cooktop with zero wobble. Heats evenly in about 4 minutes on medium setting. The flat side makes excellent dosas and the ridged side grills beautifully. Finally a multi-use cast iron pan that works properly on induction. Very happy with this purchase.

Grilled cheese sandwich — the best I've ever made at home

I'm particular about grilled cheese sandwiches. You need even, controlled heat to melt the cheese completely while crisping the bread perfectly. The ridged side of this griddle is ideal. The ridges give the bread beautiful grill marks and a slight crispiness, while the cast iron's even heat melts the cheese uniformly. I now make grilled cheese on weekends as a ritual. Simple food elevated to perfection by the right cooking surface.

Pre-seasoning was thorough — first use was flawless

The pre-seasoning on both sides is excellent. I followed the recommended re-season before first use (dry, oil, heat on low for 5 minutes) and the first dosa on the flat side came out perfectly. First attempt at grilling paneer on the ridged side also worked without sticking. A good pre-seasoning means there's no awkward break-in period. Evvolife has clearly invested in getting this right. First use should not be a struggle and with this griddle it wasn't.

Made seekh kebabs on the ridged side — outstanding

Seekh kebabs shaped on skewers need a flat, hot surface to roll and cook evenly. The ridged side of this griddle works perfectly — I roll the kebabs across the ridges, and the gaps between the ridges allow the fat to drain while the ridges themselves create an even char all around. My seekh kebabs came out evenly cooked with a proper crust and beautiful colour. The ridged surface is not just for aesthetics — it's functional for how it cooks.

Flat side for breakfast, ridged side for dinner — one pan all day

My cooking schedule with this griddle: morning — flat side for dosas or besan chilla. Evening — ridged side for grilling chicken or paneer. The griddle stays on my stovetop all day and just gets flipped as needed. Because it's cast iron, cleaning between uses is simple (warm water, brush, dry). I've gone from using 3-4 different pans throughout the day to just this one. My kitchen is simpler and my cooking is better.

Corn on the cob on the ridged side — perfect char

I discovered that the ridged side works brilliantly for grilling corn on the cob. Cut the cob into smaller rounds, place on the preheated ridged surface, and the corn gets a beautiful char on the flat cut surface while the kernels develop a slight smoky sweetness. Served with butter, chilli powder, and lime — it was extraordinary. A use case I didn't expect but now make regularly. The ridged side handles anything that benefits from direct high heat with drainage.

Rotis on the flat side are soft and perfectly puffed

I switched to this griddle from a regular tawa and the rotis are noticeably better. The larger 30cm surface means I have more room to flip without the roti touching the edge. The even heat means the roti puffs uniformly — no one section cooking faster. When I hold the roti directly over the flame after the tawa stage, it puffs into a perfect balloon consistently. Cast iron on the flat side delivers exactly what a good roti needs.

The seasoning on both sides builds simultaneously

One thing I love about using both sides regularly is that the seasoning on both surfaces builds up simultaneously. The flat side builds seasoning from dosas and rotis. The ridged side builds seasoning from grilling with oil. Three months in, both surfaces have developed excellent natural non-stick. This dual seasoning development is unique to a reversible griddle — two well-seasoned surfaces from a single piece of cookware.

Made shakshuka on the flat side — beautifully even cooking

I tried making shakshuka on the flat side (using it like a flat pan with a slight lip) and it worked beautifully. The even heat distribution means the tomato-egg base cooked uniformly, the eggs set perfectly without the edges overcooking, and the whole dish had a lovely slight char on the bottom layer. Cast iron shakshuka is now a regular in my kitchen. The flat side is versatile beyond just dosas and rotis.

Sandwich toasting on the ridged side is now my favourite

I don't own a sandwich toaster but I don't need one anymore. The ridged side toasts sandwiches to perfection — grill marks on both sides, cheese melted, filling heated through. I press the sandwich with a heavy spoon while it cooks to ensure full contact. Both sides get beautiful grill marks. The result looks professional and tastes far better than a sandwich toaster because the cast iron heat is more intense and direct. My lunch game has completely changed.

No Teflon — I don't worry about flaking into food anymore

For years I used non-stick contact grills and tawas and always had a background anxiety about the coating flaking. You can't avoid the wear over time and seeing dark flakes near food is genuinely alarming. This cast iron reversible griddle has zero coating. It's iron and vegetable oil seasoning — nothing can flake or leach. I cook without anxiety now, especially when making my children's food. The peace of mind alone makes the switch worthwhile.

Excellent for making adai on the flat side

Adai — mixed lentil dosa — is thicker and denser than regular dosa and requires even, sustained heat to cook through without burning the outside. The flat side of this griddle is perfect for it. Medium heat, the adai cooks through evenly and gets a beautiful golden crust. The 30cm surface accommodates a good size adai. My adai has been consistently excellent since switching to this griddle. The flat side handles thick and thin batters equally well.

Fish on the ridged side — crispy skin, no sticking

Cooking fish on a flat pan always results in the skin sticking and tearing. On the ridged side of this griddle, the ridges lift the fish slightly and make far less contact with the surface, dramatically reducing sticking. Fish skin gets beautifully crispy and chars on the ridges. The excess moisture and fat drains into the grooves. My pan-grilled fish now has restaurant-quality crispy skin. A specific use case that the ridged surface handles better than anything else.

Both sides clean equally easily — care is not complicated

I was worried about cleaning the ridged side — all those grooves seemed like they'd be a nightmare. In practice: while the griddle is still warm, warm water and a stiff brush cleans the ridges easily. Fat and food residue come out of the grooves without difficulty. Dry on low flame for 2 minutes, wipe with oil. The same routine works for both sides. Total cleaning time: 5 minutes. Not complicated at all once you get into the routine.

Asparagus on the ridged grill — a new kitchen staple

I started buying asparagus specifically because of this griddle. Tossed with olive oil, salt and pepper, placed on the preheated ridged side — asparagus grills to perfection in about 4 minutes. Beautiful char marks, slightly crispy tips, tender stalk. Something I'd only order in restaurants because making it at home was unsatisfying is now a weekly side dish. This griddle has genuinely changed what I cook, not just how I cook it.

Made South Indian breakfast and BBQ dinner on the same day

Sunday is now my favourite cooking day. Morning: flat side for pesarattu and uttapam. Evening: ridged side for a small BBQ spread — paneer tikka, grilled peppers, mushrooms, corn. The griddle handles both completely different cooking styles without any issue. The versatility means I get variety without needing different equipment. One pan, two cooking styles, two completely different meals — all in one day.

The 30cm size is perfect for a family of four

With a family of four I need to make food in reasonable quantities. The 30cm surface is large enough to cook 2-3 rotis slightly overlapping, or a large dosa, or a proper full portion of grilled vegetables. Not so large it's unmanageable on a standard stove. For family cooking, this size is the sweet spot — enough surface area to cook efficiently without being unwieldy. The dual handles make it safe to carry even when full of hot food.
