Description
Care & Seasoning

Before your first use

  • Every piece ships pre-seasoned with vegetable oil, but a quick re-season before first use builds an even stronger, more durable surface
  • Rinse with warm water only — no soap needed on the very first wash
  • Dry completely, then rub a thin, even layer of cooking oil over the entire surface
  • Heat on low-medium flame for 5 minutes, let cool, and it's ready to cook

After every use

  • Clean with warm water and a soft brush or sponge — avoid soap and steel wool, which strip the seasoning
  • Dry immediately and thoroughly on low heat to prevent rust — cast iron should never air-dry
  • Apply a light coat of oil while the pan is still slightly warm, then wipe off any excess

Building seasoning over time

  • Seasoning strengthens with regular use — the more you cook, the more naturally non-stick it becomes
  • If food starts sticking or the surface looks dull or patchy, simply repeat the seasoning steps above
  • A little rust on the surface is normal and easily fixed — scrub gently, dry fully, and re-season; it doesn't mean the pan is damaged

Good to know

  • Avoid cooking highly acidic foods (like tomato-heavy curries) for extended periods until seasoning is well-built up
  • Store in a dry place; a thin film of oil before storing prevents moisture buildup

Crispy golden crust outside, pillow soft inside - just like grandmother's

Growing up in Madurai, my grandmother made kuzhi paniyaram in an antique cast iron pan that weighed a ton. After moving to Bangalore, I used a non-stick appe pan for years and was always disappointed by the pale, rubbery texture. This EVVOLIFE 12-cavity pan brought back the exact taste of my childhood. The batter sizzles the second it hits the cavity, forming that signature gossamer-thin crunchy shell while keeping the interior porous, fluffy, and steaming hot. Worth every single rupee.

The 12-cavity layout is a massive lifesaver on busy school mornings

Our previous appe pan had only 7 cavities. By the time the second batch was ready, the first batch was already cold and my two school-going kids were fighting over who gets served first. With 12 generous cavities, one single round feeds both my children and my husband together. The 5.2 cm cavity size is deep and spherical, so each appe turns out properly plump rather than flat like a disc. My morning breakfast routine is cut in half.

Unniyappam turned out deep golden with zero burning or sticking

Making authentic Kerala unniyappam with melted jaggery, mashed bananas, and roasted coconut bits is tricky in light pans because the high sugar content tends to scorch black before the center cooks through. The 3.2kg heavy gauge of this EVVOLIFE pan provides wonderful thermal damping. Heat distributes steadily at medium-low flame, gently caramelizing the jaggery into an aromatic, glossy dark crust while cooking the center completely through. Turned out bakery quality on Vishu.

Sabudana appe made with just drops of ghee - zero deep fry guilt

Every fasting season (Navratri and Ekadashi), making traditional sabudana wada used to mean deep-frying in half a liter of groundnut oil, leaving everyone feeling bloated and heavy. I tried making sabudana appe in this cast iron pan with just 3-4 drops of ghee in each cavity. They puffed up wonderfully spherical, turned blisteringly crisp on the outside, and remained melt-in-mouth soft inside. My family actually preferred these over deep-fried wadas!

Heavy base stays rock-steady on the burner while flipping

If you have ever used cheap lightweight aluminium appe pans, you know the annoying struggle where the whole pan slides around or tips over whenever you try turning the balls with a wooden skewer. Because this pan weighs a solid 3.2kg, it stays firmly planted on the gas burner like an anchor. You can swiftly rotate all 12 paddus one after another with one hand without holding the pan down with a cloth.

Authentic Chettinad kara paniyaram with small shallots - perfection

As a native of Karaikudi, kara paniyaram tempered with mustard seeds, curry leaves, ginger, and plenty of chinna vengayam (small shallots) in sesame oil is sacred in our home. A pan must hold heat evenly so the onions sizzle and infuse into the batter without burning. This pan delivered restaurant-grade results on day one. Paired with spicy red chilli-tomato kara chutney, it felt like sitting in a traditional Chettinad mess.

Thermal mass is incredible - back-to-back batches cook even faster

The true test of cast iron is how it handles multiple rounds of cooking. Thin pans cool down drastically the moment you pour in cold batter from the fridge, resulting in soggy bottoms. This EVVOLIFE pan retains so much heat in its thick 3.2kg body that batch two and batch three actually cook faster and get an even more even golden ring than the first. We made 48 paniyarams for a weekend family get-together in under 20 minutes.

Raised loop handles keep hands safely away from the flame

I really appreciate the smart ergonomic design of the handles. Rather than flat, flush tabs that sit right over the heat zone, these raised loop handles sit high and clear of the pan body. Even when the pan is sizzling hot on the burner, I can comfortably slip oven mitts or silicone grippers through the loops to lift or reposition the pan without fear of knuckles grazing the scorching cast iron edge.

Karnataka masala paddu with dill leaves turns out heavenly

In our household, Sunday breakfast means Mysore-style bisi bisi masala paddu packed with fresh sabbakki soppu (dill leaves), finely minced green chillies, and ginger. This pan gives the paddus that distinct rustic char and crisp crust that no non-stick Teflon surface could ever replicate. Served piping hot with freshly grated coconut chutney and spicy allam pachadi, it was a runaway hit with my in-laws.

Pre-seasoning was genuinely effective right out of the box

Most cast iron cookware claims to be pre-seasoned, but you end up with stuck food and tears on the first attempt. With this EVVOLIFE pan, I just washed it gently with warm water, rubbed a thin film of gingelly oil, heated it for 5 minutes, and poured in my fermented batter. To my complete surprise, every single one of the 12 paniyarams released effortlessly on the first flick of the wooden skewer without a single torn edge.

Healthy veggie oats appe for my diabetic parents

I was looking for ways to make healthy breakfast interesting for my parents who need to manage their blood sugar. I prepared an appe batter using powdered rolled oats, curd, grated carrots, finely chopped beans, and coriander. Because the cast iron develops its own natural slick patina, I only needed two drops of oil per cavity. The appe cooked through with a delectable nutty crunch. My father loved them and eats them twice every week now.

Andhra guntha ponganalu with spicy palli pachadi - unbeatable crispness

In Guntur, we love our evening guntha ponganalu extra crisp and spicy. We temper sour dosa batter with jeera, onions, and lots of green chillies. Light non-stick pans always leave the ponganalu soft and chewy like steamed idlis. But this heavy cast iron tawa gives that signature crackling outer shell that stays crisp even after cooling down on the plate for ten minutes. Absolutely spot-on authentic Telugu texture.

Replaced our flaking non-stick appe maker for good

I noticed tiny black Teflon flakes sticking to the underside of our appe from our three-year-old branded non-stick maker. Feeling disgusted, I threw it straight into the garbage and ordered this pure chemical-free cast iron pan. Knowing that my family is now eating food cooked on 100% natural pre-seasoned iron with zero PTFE or PFOA gives me immense peace of mind as a mother.

Zero-oil falafel balls that are thoroughly crisp without deep frying

I love Middle Eastern falafels but hated submerging soaked chickpea patties into deep hot oil. I shaped the seasoned chickpea, parsley, and garlic mixture into compact balls and dropped them into the preheated oiled cavities of this EVVOLIFE pan. Rotating them 90 degrees every two minutes yielded perfectly spherical, evenly browned, crisp falafel bites with soft herby centers. Served inside pita pockets with tahini, they were spectacular.

Deep 5.2cm cavities produce full round spherical balls, not flat patties

Many paniyaram pans in the market have shallow bowl-like indentations that produce flat, saucer-shaped paddus. The cavities in this EVVOLIFE pan are properly hemispherical and 5.2 cm wide. When you pour batter and turn it halfway through, the batter expands to form a complete 3D ball that looks like it came straight from a professional sweet shop or street vendor stall. The presentation on the dining table is gorgeous.

Cheesy corn stuffed appe bites - my toddler's favorite lunchbox item

Getting my 4-year-old to eat lunch was a daily battle until I started making stuffed appe with this pan. I fill the cavity halfway with suji batter, pop a tiny cube of mozzarella cheese and sweet corn in the center, and cover it with another spoonful of batter. When flipped and cooked, the cheese melts inside while the outside stays toasty crisp. It fits neatly into a toddler lunchbox and stays appetizing until noon.

Induction cooktop compatibility is seamless and uniform

I was skeptical whether a cast iron paniyaram pan would work properly on an induction hob since heat needs to reach all 12 outer cavities evenly. Because the base is thick, flat, and genuinely heavy, it couples perfectly with my induction cooktop. I preheat on 800W for 3 minutes and then cook on 400W. All 12 cavities brown at nearly the same rate without the center burning or corners staying raw.

Traditional Nei Appam for Karthigai Deepam festival

During Karthigai Deepam, lighting lamps and offering fresh sweet nei appam made with raw rice flour, jaggery syrup, cardamom, and ghee is an annual tradition in our family. In previous pans, the ghee would smoke and the appams would stick stubborn. In this heavy EVVOLIFE pan, the appams puffed up like golden dumplings, rotating effortlessly with a brass needle. The divine aroma of ghee and cardamom filled our entire home.

Leftover idli batter turns into a gourmet evening snack in 10 minutes

On days when I have just two cups of sour idli batter left in the fridge that isn't enough for a full dinner of dosas, this pan is my secret weapon. I toss in diced onions, green chillies, grated ginger, and crushed curry leaves, pour into the cavities, and in ten minutes we have 12 piping hot, crunchy paniyarams ready to go with evening filter coffee. Zero food wastage and maximum flavor.

Instant sooji vegetable appe for sudden evening guests

Unannounced guests dropped by yesterday at 5 PM. Within 15 minutes, I whipped up a batter of semolina (sooji), curd, water, finely chopped capsicum, grated carrots, and mustard tempering. This pan heated up quickly on medium flame. By 5:25 PM, I served two dozen hot, golden, crunchy vegetable appe with green mint chutney. My guests were raving about how crisp they were and asked where I bought the pan.

High-protein mixed dal & sprout appe for my post-workout meal

I am on a high-protein fitness diet and got tired of boiled eggs and protein shakes. I soaked chana dal, moong dal, and urad dal with ginger and cumin, coarsely ground it, and folded in sprouted moong. Cooking these in the EVVOLIFE appe pan with a quick spray of olive oil produces delicious high-protein nuggets that have a delightful crunchy crust and soft savory center. It has completely upgraded my diet routine.

Kerala chaya kadi made on rainy monsoon afternoons

Monsoon in Wayanad means endless rain and craving hot tea-time snacks. We made spicy egg-batter paniyaram with shredded coconut and shallots. The cast iron pan sizzled delightfully on the stove, keeping the kitchen warm and comforting. The paniyarams had that unmistakable smoky cast-iron depth of flavor that aluminium or steel simply cannot produce. Paired with strong black tea, it was pure bliss.

Cleaning and maintenance takes less than three minutes

A lot of people fear cast iron because they think maintenance is a chore. But this paniyaram pan is so well-seasoned that nothing clings to it. As soon as the pan cools down to warm, I rinse it under running tap water with a natural coir brush (no soap), dry it thoroughly over the stove flame for 60 seconds, and rub half a teaspoon of cooking oil with a paper napkin. It looks brand new every single day.

Nutritious ragi & drumstick leaves (murungai keerai) paniyaram

Getting kids to consume iron-rich moringa leaves is normally impossible. I chop fresh murungai keerai finely, saute them with onions and cumin, and fold them into fermented finger millet (ragi) batter. In this cast iron pan, the ragi develops an intensely satisfying earthy crunch on the surface while remaining soft inside. My daughter ate six of them without realizing she was eating drumstick leaves!

Crispy kofta balls for Malai Kofta without swimming in oil

Whenever I cook restaurant-style Malai Kofta curry, the most dread-inducing step is deep-frying the delicate paneer-potato koftas which often break or absorb tons of oil. This 12-cavity appe pan solved the problem permanently. I shaped the paneer-khoya mixture into balls, placed them into lightly oiled cavities, and gently rotated them until evenly golden brown all around. They held their shape perfectly in the rich cashew gravy.

Authentic Chettinad seeru gift for my daughter's wedding

In our Chettinad tradition, gifting heirloom cookware (seeru) to a newly married daughter is customary. I bought two of these 12-cavity EVVOLIFE pans - one for myself and one for my newly wed daughter in Chennai. The casting quality is exceptional: smooth cavity interiors, robust raised loop handles, and solid unblemished finish. She called me yesterday saying her first batch of vellam paniyaram turned out better than mine!

Even heat across all 12 cavities - no cold spots on the perimeter

With multi-cavity pans, the biggest flaw is usually that the 4 center cavities burn while the 8 outer cavities remain pale and uncooked. Because of the substantial 3.2kg cast iron thickness of this EVVOLIFE pan, heat radiates laterally through the metal. While the center cavities get ready slightly faster, the outer ones brown evenly within 30-40 seconds of each other. Once rotated, all 12 finish cooking uniformly together.
