Description
Care & Seasoning

Before your first use

  • Every piece ships pre-seasoned with vegetable oil, but a quick re-season before first use builds an even stronger, more durable surface
  • Rinse with warm water only — no soap needed on the very first wash
  • Dry completely, then rub a thin, even layer of cooking oil over the entire surface
  • Heat on low-medium flame for 5 minutes, let cool, and it's ready to cook

After every use

  • Clean with warm water and a soft brush or sponge — avoid soap and steel wool, which strip the seasoning
  • Dry immediately and thoroughly on low heat to prevent rust — cast iron should never air-dry
  • Apply a light coat of oil while the pan is still slightly warm, then wipe off any excess

Building seasoning over time

  • Seasoning strengthens with regular use — the more you cook, the more naturally non-stick it becomes
  • If food starts sticking or the surface looks dull or patchy, simply repeat the seasoning steps above
  • A little rust on the surface is normal and easily fixed — scrub gently, dry fully, and re-season; it doesn't mean the pan is damaged

Good to know

  • Avoid cooking highly acidic foods (like tomato-heavy curries) for extended periods until seasoning is well-built up
  • Store in a dry place; a thin film of oil before storing prevents moisture buildup

At 2kg, this is the Goldilocks weight for daily cast iron cooking

I previously owned a 3.5kg heavy cast iron paniyaram pan that was so unwieldy my mother refused to touch it. This 2kg flat handle model from EVVOLIFE hits the absolute sweet spot. It is heavy enough to hold heat steadily without scorching the batter, yet light enough that my 62-year-old mother can easily lift it with one hand to rinse at the sink. The paddus come out blisteringly crisp on the outside and airy inside.

Flat side handles fit our compact modular kitchen drawers seamlessly

Our modular kitchen has shallow pull-out drawers where looped or bulky handle cookware simply won't fit without jamming the slider. These integrated flat ear handles sit completely flush with the rim. The pan slides into our drawer effortlessly and takes up zero unnecessary vertical or lateral space. Plus, on our 3-burner gas stove, the handles don't knock against our tea saucepan.

Fast weekday school breakfast - 12 veggie appe in under 8 minutes

With two kids heading to school at 7:30 AM, time is everything. Because this 2kg pan is slightly lighter than traditional heavy kadhais, it preheats to optimal temperature in barely 2.5 minutes on medium gas flame. I pour in fermented suji-veggie batter, flip with a bamboo skewer after 3 minutes, and 12 hot, golden appe are packed in lunchboxes by 7:15 AM. A total morning lifesaver.

Crispy Chettinad kara paniyaram with small shallots - zero sticking

I was apprehensive about seasoning quality because fermented rice-urad batter with sauted shallots and ginger can stick badly to unseasoned cast iron. I followed the simple warm-water rinse and light oil rub before first use. Every single one of the 12 paniyarams detached cleanly with a light flick of a wooden skewer. The crust had that authentic Chettinad golden crackle with soft steaming interior.

Sits completely flat on my glass induction cooktop without wobbling

Many cast iron pans have an uneven cast base that rocks or spins on flat glass induction stoves. This EVVOLIFE flat-handle pan has a remarkably smooth, dead-flat bottom. It sits rock solid on my induction hob, makes zero vibration hum, and heats all 12 cavities evenly. Induction-friendly cast iron done right.

Sabudana appe for Ekadashi fast - replaced oily deep frying completely

Every fasting season, deep-frying sabudana wada leaves our kitchen reeking of oil and our stomachs feeling heavy. In this 12-cavity pan, I made sabudana appe using just 2 drops of cow ghee per cavity. They puffed up into gorgeous round spheres with a blistered, super-crispy outer skin and soft, stretchy sabudana center. My family asked me to never deep fry them again.

Unniyappams caramelized beautifully without the jaggery scorching

Sweet unniyappam batter made with dark jaggery and mashed bananas is notoriously sensitive to sudden heat spikes. In thin aluminium pans, the bottom chars black before the center cooks. The 2kg cast iron distributes heat with such gentle equilibrium that the jaggery caramelizes into a glossy mahogany shell while the center remains fragrant, moist, and fluffy.

Easy one-hand wash at the sink - no wrist strain

I suffer from mild wrist arthritis and gave away my old 3.5kg paniyaram kal because holding it under running water was agonizing. At exactly 2kg, this pan is astonishingly manageable. I can comfortably hold it by one flat handle with a silicone thumb grip while scrubbing with a coconut coir brush under the tap. Finally, cast iron benefits without joint pain!

Karnataka masala paddu with dill leaves has authentic street-food crunch

Living in Bangalore, we love the spicy masala paddu from local darshinis that are packed with sabbakki soppu (dill), green chillies, and ginger. Coated non-stick makers produce limp, steamed paddus. This cast iron pan creates that authentic rustic outer char and crackling bite that pairs so divinely with coconut chutney.

Replaced our scratched Teflon appe patra - 100% toxin free

Noticed our old non-stick appe pan was showing tiny grey scratches where the synthetic PTFE layer was flaking into food. Replaced it immediately with this chemical-free pre-seasoned cast iron pan. Knowing our breakfast is free from toxic coatings and enriched with natural dietary iron brings immense peace of mind.

Healthy high-protein sprouted moong appe for gym fitness diet

I blend soaked green moong and sprouted black gram with ginger, cumin, and green chillies. Cooking them in this pan with an olive oil spray yields 12 crispy high-protein bites that taste like savory street snacks but have zero junk calories. It has transformed my daily post-workout nutrition routine.

Andhra guntha ponganalu with fiery peanut chutney - unmatched texture

In our Vijayawada household, spicy evening ponganalu must have a crisp rim and tender, spongy core. The heat distribution across the 12 cavities in this 2kg pan is delightfully uniform. Paired with spicy roasted peanut and garlic pachadi, each bite crackles first and melts right after.

Stovetop to oven versatile - baked mini frittata muffin bites

Because this pan is 100% cast iron with no plastic or wooden handles, it moves effortlessly from stove to oven. I sauted diced mushrooms and spinach on the stovetop, poured in whisked eggs with cheddar, and popped the entire pan into my convection oven at 190C for 10 minutes. The egg bites puffed like gourmet mini souffles.

12 cavities means nobody waits while the food gets cold

With our earlier 7-cavity pan, breakfast was an agonizing staggered relay race where one person ate while others watched. With 12 deep cavities, a single round yields enough for our family of three. The second batch cooks even faster because the cast iron stays preheated.

Zero-oil falafel balls that stay juicy inside and crunchy outside

Making authentic chickpea falafels usually requires submerging them in a pot of boiling oil. I formed seasoned falafel mixture into small balls and roasted them in this paniyaram maker with just a brush of sesame oil. They browned evenly on all sides, staying herbaceous and moist inside while maintaining a crunchy exterior.

Nei Appam for Karthigai Deepam festival turned out divine

Offering fresh homemade nei appam fried in pure cow ghee for Karthigai Deepam is an annual family ritual. The cavities in this pan cradled the sweet rice batter as it puffed into symmetrical spheres. The aroma of ghee and roasted cardamom brought our entire household into festive spirit.

Flat handles give a remarkably stable two-hand grip with pot holders

The flat side ears are wide enough to get a firm, balanced two-handed grip with kitchen cloths or silicone pinchers. When moving a batch of sizzling hot paniyarams off the burner onto the dining trivet, the pan feels exceptionally stable with zero tilting or wobbling.

Kids love cheese-stuffed corn appe for school lunchbox

I spoon suji batter halfway into the cavities, add a tiny cube of processed cheese and sweet corn in the middle, and top with batter. Flipped after two minutes, they turn into crispy golden cheese bombs. My 6-year-old son finishes his entire tiffin box every single time.

Leftover idli batter converted into crunchy evening snack in 10 minutes

Whenever we have two cups of sour idli batter left over, this pan turns it into an irresistible evening snack. Folded in chopped onions, green chillies, curry leaves, and a pinch of hing. Ten minutes later, 12 sizzling hot paniyarams were ready to accompany our evening filter coffee.

Pre-seasoning was genuinely ready to cook right from day one

I was mentally prepared to spend days scrubbing and re-seasoning with onion skins before making my first dish. But EVVOLIFE's factory vegetable oil seasoning was so well applied that my first trial batch of plain dosa batter released cleanly without leaving a single speck of batter behind.

Foxtail millet paniyaram for diabetic meal planning

We switched our grain intake to siridhanya millets. Millet batters can easily turn dry and brittle in cheap cookware. In this cast iron maker, the high thermal retention instantly seals the outer surface, trapping internal steam so the millet paniyaram stays soft and porous. Dipped in tomato chutney, they are delicious.

Takes up very little stove real estate on our 2-burner gas hob

In our compact rental apartment in Mumbai, our 2-burner stove is small. Long-handled or high-looped cookware always bumps against whatever is cooking on the next burner. The low-profile flat handles of this paniyaram pan stay neatly within the burner boundary, letting me boil tea alongside without handle clashes.

Sweet coconut and banana paniyaram for evening puja prasad

Prepared traditional sweet paniyaram with ripe poovan banana, organic grated jaggery, cardamom, and tiny fried coconut bits. In this pan, the natural sugars formed a delicate caramel crust while the inside was moist and tender. Offered hot as prasad, everyone at home was delighted.

Deep 5cm spherical cavities make properly rounded appe balls

Many cheap appe pans have shallow indentations that produce flat puck-like patties. The cavities on this pan are properly contoured hemispheres. When you rotate the batter 90 degrees with a wooden skewer, it fills out into a plump, three-dimensional sphere that looks like street vendor food.

Smooth natural non-stick surface that improves with every single use

I have used this pan at least three times a week for two months now. The seasoning has matured into a glossy black mirror patina. Now I literally use only 1-2 drops of gingelly oil per cavity, and the paniyaram rotates like ball bearings when nudged. Absolutely outstanding.

Gujarati methi muthiya bites cooked healthy with zero deep fry

Traditional methi muthiya for tea-time is deep fried in oil. I rolled the spiced fenugreek, besan, and whole wheat dough into small balls and roasted them in this appe pan with a quick oil drizzle. They crisped up on all sides with a nutty, aromatic crust. A guilt-free snacking upgrade.

Poha appe with roasted peanuts and lemon juice - 15 minute snack

Soaked flattened rice (poha) ground with semolina, sour curd, green chillies, and crushed peanuts. In this pan, the exterior peanuts toasted into a crunchy brittle crust while the inside remained light and fluffy. Served with mint chutney, it was an instant family favorite.

Even heat across all 12 cavities - center doesn't burn before edges

The heat distribution in this 2kg pan is impressively balanced. On medium-low flame, the outer 8 cavities reach cooking temperature almost simultaneously with the central 4. All 12 paddus brown uniformly, meaning you can rotate them one after another in a smooth sequence.
