Description
Care & Seasoning

Before your first use

  • Every piece ships pre-seasoned with vegetable oil, but a quick re-season before first use builds an even stronger, more durable surface
  • Rinse with warm water only — no soap needed on the very first wash
  • Dry completely, then rub a thin, even layer of cooking oil over the entire surface
  • Heat on low-medium flame for 5 minutes, let cool, and it's ready to cook

After every use

  • Clean with warm water and a soft brush or sponge — avoid soap and steel wool, which strip the seasoning
  • Dry immediately and thoroughly on low heat to prevent rust — cast iron should never air-dry
  • Apply a light coat of oil while the pan is still slightly warm, then wipe off any excess

Building seasoning over time

  • Seasoning strengthens with regular use — the more you cook, the more naturally non-stick it becomes
  • If food starts sticking or the surface looks dull or patchy, simply repeat the seasoning steps above
  • A little rust on the surface is normal and easily fixed — scrub gently, dry fully, and re-season; it doesn't mean the pan is damaged

Good to know

  • Avoid cooking highly acidic foods (like tomato-heavy curries) for extended periods until seasoning is well-built up
  • Store in a dry place; a thin film of oil before storing prevents moisture buildup

Perfect 9-cavity size for couples - no wasted space or empty pits

My husband and I live alone and always felt silly pulling out a giant 12-cavity pan just to make breakfast for the two of us. Heating empty cavities is bad for seasoning, so this 9-pit pan is an absolute dream. We make exactly 9 hot, crispy vegetable appe for our morning meal, eat together, and wash up in two minutes. The 1.8kg weight is so nimble and easy to handle.

At 1.8kg, it heats up in under two minutes on medium flame

The standout feature of this 9-pit model is how swiftly it reaches cooking temperature. Because it weighs 1.8kg rather than 3kg+, I only need to preheat it on medium-low flame for about 90 seconds before ladling in the batter. The sizzle is instantaneous, forming that gossamer-thin crunchy shell while keeping the inside fluffy, moist, and steaming hot.

Chandrakant Thorat
The ultimate leftover batter problem solver

Every Indian household knows the struggle of having just 1 to 1.5 cups of sour idli batter left in the dabba that isn't enough for a full family meal. In a 12-hole pan, you're left with 4 empty pits burning dry. In this 9-cavity pan, that exact leftover portion fills all 9 pits to the brim with diced onions and green chillies. It turns kitchen leftovers into a gourmet tea-time feast.

Authentic Chettinad kara paniyaram with small shallots - zero sticking

I was slightly worried that a lighter cast iron pan might compromise on the seasoning slickness. I rinsed it with warm water, rubbed three drops of gingelly oil, and poured my spiced batter. Every single one of the 9 paniyarams released effortlessly with a gentle flick of a wooden skewer. Golden, crunchy exterior with pillowy soft interior — true Karaikudi flavor!

Effortless one-handed sink washing - zero wrist strain

I have mild carpal tunnel in my right wrist, so heavy 3.5kg cast iron skillets were causing me real discomfort when holding them under the tap. This 1.8kg pan is a breath of fresh air. I can hold it comfortably with one hand while scrubbing with a natural coir brush using the other. Cast iron benefits with zero orthopedic pain!

Sabudana appe for Ekadashi fast - crispy with just drops of ghee

During fasting days, making sabudana wada used to mean filling a kadhai with groundnut oil and deep-frying. In this 9-cavity pan, I made 9 sabudana appe using just 2-3 drops of cow ghee per pit. They puffed into perfectly round spheres with a blistered, super-crunchy exterior and stretchy, soft center. My mother-in-law loved how light and non-greasy they felt.

Dual loop handles make lifting off the burner secure and balanced

I really appreciate the loop handle design on this pan. The raised ear loops sit clearly above the flame zone, giving ample clearance for silicone pinchers or kitchen cloth. Even when the pan is sizzling hot after 15 minutes of cooking, moving it to the dining table trivet feels completely secure without any tilting.

Kerala Unniyappam caramelized evenly without scorching

Sweet unniyappam made with melted black jaggery, mashed bananas, and roasted coconut slivers requires delicate heat control. Thin pans always scorch the jaggery before the middle is cooked. This 1.8kg cast iron holds just enough steady thermal inertia to caramelize the outer crust into a glossy dark mahogany while keeping the inside aromatic and spongy.

Compact footprint fits our small 2-burner apartment stove perfectly

In our small rented apartment kitchen in Mumbai, stove space is at a premium. Bulky cookware always bumps into the pressure cooker on the adjacent burner. This 9-cavity pan has a compact circular profile that sits comfortably on one burner, leaving plenty of room next to it for boiling milk or making chai.

Healthy sprouted moong dal appe for post-workout nutrition

I soak green moong, blend it with ginger, cumin, and green chillies, and cook 9 high-protein appe in this pan with an olive oil spray. It gives me a clean, nutrient-dense breakfast that tastes like an indulgent savory street snack. An essential tool for anyone serious about healthy fitness eating.

Karnataka masala paddu with dill leaves has authentic darshini crunch

Made traditional Bangalore-style masala paddu with fresh sabbakki soppu (dill), green chillies, and onions. The crust developed that rustic golden-brown crackle that you only get from seasoned cast iron, while the inside had the classic honeycomb steam vents that soak up coconut chutney. Divine Sunday breakfast.

Replaced our peeling non-stick appe maker for good

Our old Teflon appe pan had circular scratches at the bottom of the cups where the non-stick coating was peeling into our food. We threw it out and upgraded to this 100% natural, chemical-free cast iron pan. Knowing our food is free from PTFE, PFOA, and synthetic toxins is priceless.

Sits flat and steady on induction without vibration or noise

Tested this on my Philips induction cooktop. The machined bottom is completely flat and couples smoothly with the ceramic glass surface. It heated all 9 cavities uniformly without any annoying high-pitched buzzing or wobbling. Induction-friendly cast iron at its best.

Portion control perfection for mindful eating and weight loss

When cooking in a 12-hole pan, you naturally tend to eat 12 appe. With this 9-pit pan, it naturally regulates my portion size to 9 high-fiber oats and veggie appe, which is exactly 280 calories. It has helped me stay disciplined on my calorie-deficit journey without feeling deprived.

Deep hemispherical pits create plump 3D round spheres

Many cheap appe makers have shallow concave pits that yield flat, UFO-shaped discs. The cavities on this EVVOLIFE pan are properly deep. When you flip the batter 90 degrees with a wooden pin, it expands into a full spherical ball that looks like it came from a professional South Indian snack stall.

Zero-oil falafel bites - crispy outside, juicy inside

Making falafels without deep-frying used to be a frustrating trial in air fryers that left them dry and chalky. In this 9-cavity cast iron pan, with just a brush of olive oil in each cup, the chickpea-herb mixture browned to an even golden crunch while locking in the herb moisture inside. Outstanding result.

Nei Appam for Karthigai Deepam festival turned out divine

Cooked traditional festive nei appam in pure cow ghee as an offering for Karthigai Deepam. The appams puffed into golden balls, fragrant with cardamom, jaggery, and roasted coconut bits. Offering homemade prasad cooked in traditional iron felt auspicious and wholesome.

Cheese-stuffed corn appe - my toddler's favorite lunchbox bite

Getting my 4-year-old daughter to finish lunch was impossible until I started making these stuffed appe. I place a cube of mozzarella cheese and sweet corn in the center of suji batter. Flipped in this pan, they turn into golden crunchy cheese bombs that fit neatly in her tiffin box.

C
Chhayabai Ghatge
Fast 15-minute suji vegetable appe for sudden evening guests

Neighbors dropped by unexpectedly for evening tea. In five minutes, I whisked semolina with curd, grated carrots, green chillies, and mustard tempering. This pan heated up quickly, and within 15 minutes I served 9 steaming hot, crunchy vegetable appe with coriander dip. Everyone praised the taste.

Dwarkabai Mahadik
Natural pre-seasoning released batter effortlessly from day one

I was fully prepared to spend hours seasoning this pan before first use. To my pleasant surprise, EVVOLIFE's factory organic vegetable oil seasoning was so slick that my first trial batch of plain dosa batter released completely without a single torn edge. Truly ready to cook out of the box.

Gangubai Patankar
Andhra guntha ponganalu with spicy palli pachadi - unbeatable crunch

In our home, spicy ponganalu with roasted peanut and garlic chutney is Sunday evening comfort food. This pan gave that signature crackling outer shell that stays crisp even after cooling down on the plate for ten minutes. Absolutely spot-on authentic Telugu texture.

H
Housabai Dafle
Heirloom single-mold casting - no flimsy screws or plastic parts

There are no screws that work loose over time, no welded joints that snap, and no plastic handles that melt when exposed to high flame. The entire pan and both loop handles are molded from a single continuous piece of solid cast iron. It will easily last for decades of daily cooking.

Stovetop to oven versatility - baked mini frittata muffin bites

Because this pan is 100% cast iron with zero synthetic parts, it transitions seamlessly from stove to oven. I sauted diced mushrooms and spinach on the stovetop, poured in whisked eggs with cheddar, and slid the pan into my oven at 190C for 8 minutes. The mini frittatas puffed into delightful breakfast bites.

Takes up minimal space in our narrow kitchen plate rack

Our kitchen storage is tight, and our plate rack cannot accommodate wide 12-hole pans with long handles. This compact 9-pit circular pan slots right into our drying rack and cabinet shelves without sticking out or bumping against glassware.

Foxtail millet paniyaram for diabetic meal planning

We switched our grain intake to foxtail millet. Millet batters tend to turn dry in thin pans. In this cast iron pan, the high heat retention instantly seals the outer surface, locking in internal steam so the millet paniyarams remain soft and pillowy inside with a delicate crunch on the surface.

Sweet banana and jaggery paniyaram for evening puja prasad

Prepared sweet paniyaram using mashed banana, grated jaggery, cardamom powder, and crushed cashews in wheat flour batter. In this pan, the sugar browned into a heavenly toffee-like crust with pure cow ghee. The prasad tasted blessed, fragrant, and delectable.

Smooth seasoning that improved with every single use

I have used this pan four times a week for the past two months. The seasoning doesn't degrade — it actually gets smoother, darker, and more naturally non-stick with every single batch. It has now developed a jet-black, glass-like patina where batter glides around effortlessly.

Gujarati methi muthiya bites cooked healthy with zero deep fry

Traditional methi muthiya is deep fried in groundnut oil. I shaped the spiced fenugreek, besan, and whole wheat dough into small round balls and cooked them in this appe pan with a quick oil drizzle. They developed a nutty, aromatic crust and soft center without absorbing cups of oil.

Even heat across all 9 cavities - no cold spots around the rim

In a 9-cavity layout, the geometry is very compact (1 center pit surrounded by 8 circular pits). Because the distance from center to edge is small, the heat from the burner spreads evenly to all 9 cavities. All 9 paddus cook at virtually the identical rate.
